This is the best chowder I have ever tried

Fish Stock
Ingredients
~ 500g non oily fish bones
~ 1 x carrot, sliced
~ 1 x stick of celery, sliced
~ 1 x medium onion, sliced
~ 1 x bay leaf
~ 4 x whole black peppercorns
~ 2 x litres of cold water
Method
Chop and wash bones and place in a large pot with the rest of the ingredients. Cover with cold water and bring to the boil then turn it down to simmer for 20mins. When done strain with a fine strainer and cool.

Chowder base
Ingredients
~ 100g unsalted butter
~ 100g plain flour
~ 2 x teaspoons of minced garlic
~ 1 x carrot, finely chopped
~ 1 x leek, finely chopped
~ 1 x stick of celery, finely chopped
~ ½ cup brandy
~ 2 x stalks of fresh dill, finely chopped
~ 2 x stalks of fresh thyme, finely chopped
Method
Add butter to a large pot and melt till hot then add the garlic, vegetables and herbs and cook the vegetables until golden brown. At this stage add the brandy and light it up, now add the flour whilst stirring continuously until it is all mixed together. Now start to add you fish stock 1 cup at a time, stirring until all is added. Bring to the boil and then simmer for 5 minutes but don’t stop stirring the bottom, as it will stick easily. Now all you have to do is add salt and pepper to taste and perhaps add a few shakes of fish sauce.

CHOWDER TO SERVE
In a smaller pot add your desired seafood, eg prawns, scallops and mussels etc and cook slightly with a dash of olive oil then add your chowder base, simmer for 3 minutes and serve.
