has anyone got, or is willing to point me in the direction of the malcom douglass trevalley recipe that featured tinned mangos coconuy creame and noodles? have been keen to try it but havent been able to fin it>

G'day mate, from memory, he put the trev in alfoil and into the embers. When it was done, he stripped off the meat from the frame, put it in a fry pan, opened a can of mangoes, poured them in the frypan along with a can of coconut cream heated it all and boiled a packet of noodles to stick in with the rest of the meal........ And got rid of loads of sand ;)

i believe you need to garnish with some aussie cattle dog dribble and hair.

didn't he put some slices of mango in the gut cavity in the alfoil -

i hate mangoes but i remember thinking apricots may be a suitable substitute

I remember him putting tinned mango slices in the cavity and the rest on top. Wrapped it up in al foil and just before sealing it poured in a tin of coconut milk. I tried it with a Barra..................Ok but needed salt and perrper as well. Not sure if Malcolm actuallly used salt and pepper.
