Be a bit cramped but I don't see why not. If one of my kids comes with me I normally run the ski up the bank or onto a sandbank and fish land based.

I have seen 2 adults fishing back to back offshore. How does the ski behave say with 200kgs on its back?

I have fished with 2 adults on the ski.
I didn't have any real problems. Just have to be a little bit more carefully when moving around but all good.

Yes. When i troll i normally go with a friend back to back . When jigging/live baiting i prefer going solo just for the ease of moving around.
