Estuarys -Flathead
Large rivers - Jewfish
Beaches - Tailor
Fresh - Cod
Bay - snapper
Don't do any fishing outside.
Overall I would say Flathead because you don't really have to know an area , you don't need a lot of gear, you can just pull up on the side of the road near a spot grab the spin rod out the back and have a flick in most Australian tidal estuary's, rivers and Beaches.
They take many baits live, frozen or fresh cut-baits,they take many HB lures, many shapes size and colour plastics.
They release well and the are also quite nice in the pan.

Flathead! I knew I forgot an important one. They are a great fish because like dan said they are so accessable, hardy and tasty. Sorry to all those people who had their favourite fish missing. I tried to think of the most popular ones but there is only space for 20 fish. Once again post your fish if it is missing.

Not my favourite but I do enjoy catching tailor on light gear. They respond well to plastics, hardbodies, slugs and surface presentations...

Catching...I like catching bream.
Eating....I like anything the cook serves me.
But I'll have to say that I don't target a species. I'll happily accept anything committing suicide and I'm not skilled enough to target a species.![]()

Maybe remove Drummer and Australian Salmon, then remove the freshwater species (another thread for that).
That might let you add a few, like the above mentioned + Trevally species.

Barra for me because of where you go to catch them in the big rivers. Its not just the fish on the line but the whole experience.
No point making things idiot proof, they'll only make a better idiot.
