Hi Seajay,
if you were going tp ick one fly for each fresh species my pick would be
Bass - Vampire
Barra - D.K Dancer (big)
Saratoga - woolhead /zonker combo
and in the Salt well..... what doesn't eat a white Clouser

Green and white clouser on clear days with clear water
Blue and white clouser on overcast days or days when the visibillity is reduced - the closer the size matches the baitfish currently swimming around the better your chances.

Thanks T-Roy,Flyfisho and Wessel
I didn't realise Clousers came in so many different colours....
(charteuse is green isn't it?)

I always have flies, doesnt matter how far out you go, they must be able to smell that bait 10 miles away
Mostly its the way you fish it, rather than what it is. Colours such as red, orange, yellow, indigo and violet are gone at 30 feet. And at 1 metre depth only 50% of the surface light remains, and that depends on atmospheric conditions, shade and light.
If you fish barra try this. Cast the fly, generally a big fluffy deceiver, into the mangroves, point the tip at it, pull the line straight and give the tip a rally good flip. Quite amazing result. Do it three times and then try again. If you cast the fly in there 3 times and don't get a barra there isn't one there. It isn't my idea but Ron Pearsons, and he's caught more barra than the collective membership of SWF australia. Maxg
Surf candy for Tuna. Big ones, medium ones, small ones and some impossibly small ones ....
The bigger the eye on the fly the better it is for catching tuna.
I am still looking for a hook with only a set of eyes glued to it and then cast that at a baitball going crazy.
That will be the only way to prove the theory either way. O yes, and some tuna to cast at would be great too. ....

Boy, what a selection of flies you're asking for...... I think they've been mentioned, but I'll just tell you what I have:
Barra:
1. DK Dancer - Gold Bomber
2. Gold Bomber FPF
3. Pink Thing
4. Black Thing
5. Pink Whistler
Bass:
1. Surface - Small poppers
- Woolly Buggers
2. Sink - Bass Vampires (various colours - mainly the original and olive)
Pelagics (Tailor, GTs, Goldens, Tuna):
1. Epoxy Candies - olive, anchovy blues, etc
2. Lefty's Deceivers - Pink Back, Yellow back
3. Minnow Clousers - Pink and Yellow
4. Polar Sparkle flies
5. Sparkleflash Clousers
6. DK Dancers - different flash colours
Bream:
1. Crazy charilies
2. Hammerheads
3. Small clousers
4. Shrimp patterns
5. Gotchas
6. Dogtooth Jelly Bellys (although I normally use them as like other SPs)
Flathead:
1. Anything...... seem to like whatever you throw on top of them
Hope that helps. Probably a lot of flies there.
Oh sorry,
Tarpon:
I'm not greatly experienced with this species yet, but have been using small USA tarpon fly patterns. Work very well.
Colour is something that fish do relate to. However, patterns do matter as fish sense vibrations more so.
For example, with whiting. Whiting don't actually use their vision or smell. They sense vibrations around them which formulate their feeding patterns. They do this in relation to the new moon phase which they come close inshore to breed and feed, thus vision is not a priority for them.
Fish lateral lines are for this particular purpose....... sensation, and thus different fly patterns have sense vibration patterns. Most, work on most species.
