Work on the new targa starts next week. What's on your list of must have's?
At this stage the key items are slide out shade, rocket launchers, steaming light, deck light and spotlight mounts and aerial mounts. Aiming for zip down / roll down clears that give the biggest uninterupted field of view possible.
Anything I've forgotten?

Mounting provision for riggers and a radar scanner
I like your thinking however my wife doesn't. The "it came with the boat" line has worked well to date but I'm not sure she'll believe me if the new targa turned up with riggers and radar!
Other advice was at least reinforce it for radar now so when you want it down the track you can just bolt it on.
plenty of access for cabling. start adding gps antennas, with radio antennas, radar, cameras, lights, floods... theres a lot of cabling that has to be snaked up there
just been on afew boats in rough weather and ive had to stretch too far to hang on or it wasnt strong enough too cope with 3-4 people hanging off it
get plates fitted for outriggers even if you dont plan to use them straight away
antennas

radios
rod storage
2 rows of rod holders. offset spacing and different angulation fore/aft
Make your vertical grab rail doubles as a knee brace so the heavy rods dont cause the stainless to crack at the bend
32mm min diam rear vertical so you can get the aerial cables through.
Large hole in the base plate so you can run cable up from under the gunwhale
Make sure you measure the height under the pull out roof with your shoes on.
I chose zip-up clears, as they roll up and out of the way. Zip down ones end up all over the dash.
Outriggers will stress your bimini. Make sure it is strong.
