Had the boat out on Tuesday in some 15 knot sloppy conditions and the permatrim worked better than expected. Made the boat softer riding and seemed to address everything I wanted.
More tests to come on flat water with video to compare.

Heres what I ended up with to finish off this thread.

I ended up buying a Vance 3inch set back jacking plate.....manual adjust. To play with the motor height.
After taking the time of adjusting it over a period of trips. I have found the sweet spot.

The motors current position sits 2 inches higher now than before the jackplate, so 3 inches above keel.
Big improvement again with handling and will be the final setup. Very happy with the way it runs now.

Adjusting the jack plate any higher than this a decline in performance can be felt.
Current height feels like everything is centred and balanced.
