Cav plates are set up from the bottom of the hull and slowly raised as the pod gets bigger 9further from the transom. For most powercats without pods you can set the cav plate about 25mm above the keel. ball park would be to add another 20mm for every 100mm of separation from the transom. So if you pods are 400mm from the transom start with your cav plate about 25+4x20mm = 105mm above the keel. Actual numbers will vary but that should be close.
Get your motors as close to parallel as possible but if in doubt make them toe in. General advice is to aim for 1 or 2mm toe in. That way you'll end up somewhere between 0 and 4mm toe in. I'd suggest removing the foils for now you shouldn't need them.
