Thai Dressing : 500ml white vinigar
1cup palm sugar
1 bunch of corriander
3tsp fresh ginger
6 cloves garlic
1 stalk lemongrass
2 pieces of star anise
5 birds eye chillis
plabce all ingredients in a small pot and bring to the boil for 3 minutes
Strain and set aside to cool. (can be made the day before)
noodles.
1 Packet of rice sticks (rice vermicecilli)
150g crushed peanuts
picked corriander leaves to taste
half cup of chopped shallots
Wontons
1 packet of wonton wrappers
300 gs of green prawn meat
1 egg
2 tsp of crushed ginger
fish.
4 white fish fillets (snapper kingfish etc)
dark sweet soy (kecap manis)
1st marinate the fish in the soy overnight.
to make the wontons.. finely chop the prawns, mix with the egg,and crushed ginger
and place small amounts in the middle of the wonton wrappers and form into wontons
Place the noodles into boiling water and let sit for 2 minutes then
cool in cold water and drain.
Place the fish and wontons in a steamer and steam for 6 minutes.
toss the remaining ingredients through the noodles and place in the middle
of the plate, arrange the fish on top with the wontons around the outside
and spoon over thai dressing and garnish with picked corriander and lime
wedges.

It looks really good when you serve it up.. the only other thing that i do to add colour to is slice as fine as you can some red capsicum and put it in ice water to add to the garnish.
