Hey Ausfish crew, just a heads up for a great online resource in regards to the technique of iki Jime. This website provides colour and x-ray photos of HEAPS of salt and fresh water fish, showing you the 'sweet' spot to humanely and quickly dispatch your catch in order to reduce fish stress and improve meat quality.

Tried to iki jime an Estuary cod once where they show to do it.....snapped the knife and stabbed the back of my hand....off to the doc for a jab and antibiotics...hard bloody heads some of those larger species!
LOL i had a similar experience prior to adopting iki, it involved a very shard knife and some decent swell, lets just say it wasnt the fish who got bled! Now I use iki and some trauma shears to bleed the fish, safe easy and humane.
