    whiting lasagne

    I think i came up with something pretty special last night. Inspired by Brisbane's famous sandcrab lasagne

    Red Sauce
    2 tins whole peeled tomatoes
    1 onion fine chop
    3 cloves garlic fine chop
    3 rasher bacon fine chop
    1/2 tsp chilli flakes
    2 tsp dried oregano
    small handful fresh parsley fine chop
    large handful fresh basil
    1 tbs honey

    in a saucepan fry off the onion and bacon in a little olive oil on med heat, just want to soften, no colour
    add the garlic, chilli flakes, oregano, salt and pepper. when the garlic has softened, add the tomatoes, smash them up a bit with your spoon and simmer gently for 30min.
    add honey, parsley, and tear in the basil leaves.

    white sauce
    4 tbs butter
    4 tbs flour
    1 1/2 cup milk
    1 1/2 cup ricotta

    melt butter on low heat
    stir in flour until you have a gluggy past, cook this on the gentle heat til it starts to bubble a little bit
    slowly add the milk, stirring it in as you go
    end product should be a thick white sauce, allow to cool and then season with white pepper and stir through the ricotta

    Assembly
    pack of fresh lasagne sheets (or two just in case)
    approx 600g whiting fillets (or as many as you need, dont be stingey with them)
    pack of baby spinach leaves
    fresh mozzarella
    parmesan

    pre heat oven to 180

    in a large oven proof dish spread a thin layer of the red sauce on the bottom
    top with 2-3 sheets
    top with 1/3 white sauce, spread out evenly
    add a layer of whiting fillets
    top with a layer of spinach leaves
    top with a layer of red sauce
    top with some cubes of mozzeralla and grate over some parmesan
    top with 2-3 sheets
    white sauce
    whiting
    spinach
    red sauce
    cheese
    sheets
    finish with the last 1/3 of the white sauce, a final grate of parmesan, cover and into the oven for 30min, take of the cover and continue cooking until golden and bubbly

    mate that sounds sensational.. im gunna give it a go for sure.. now where to get some whiting lol..
    dont knock on deaths door... ring the doorbell and run... death hates that!!
