    I too worked in a meatworks as an apprentice electrician and I used to watch the "meaties" sharpening knives. First on a slow speed sandstone then on oil stone then a steel.

    after reading posts,, went to ''king of knivies'' got myself an electric sharper ,,, works very well I must say my knivies are now sharp ,,I could never do the steel properly & the boys were always up me about blunt knivies but not any more lol

    Over the years been through this knife sharpening thing a few times ..LOL
    After trying all the above mentioned sharpen methods ....
    Now have been using over the last 4 years a Electric knife sharpener ..best thing I ever did
    I got a Chefs Coice Professional Knife sharping station....Mines a 130
    Soon as ya knife dulls just run it throught the sharpener and away ya go ..its quik and easy and hones a consistant excellent edge
