What a great idea, the problem will be the expense of filling it with cooking oil at around $3 a litre (bulk) but you can let it cool, filter, and store for later.
The only hiccup I can see is if you get too hot and it reaches flare up point from a little bit of a red glow under the stainless from too much gas, you will need to stand back if this happens and keep your fingers crossed
I cook lots of fish and chips at the moment re my current occupation and the trick is not to have a big temp drop from placing too much food, particularly battered fish. This is the problem with small deep fryers purchased from the retail stores, they cannot cope with anything and fish turns out soggy. Not a problem for you by the looks.

Ideal is 180c to 190c and I use an infrared thermometer to check against the fryer readouts
