    green curry fish balls.

    just another way to spice up the old fish. this 1 will get those taste buds dancing for more. it is a time consuming dish at first but after a few goes its not as bad as it looks.

    ENJOY


    CURRY
    500ml coconut milk
    2 tble spoons veg oil
    3-4 tble spoons of green curry past (i use the brand "Life's Good" its all natural and very good.) of course you could make your own.
    2 tble spoons fish sauce
    1 tble spoon palm sugar
    8 kaffir lime leaves
    1/2 cup basil leaves
    1 tble spoon wild ginger, shredded.

    FISH BALLS
    6 white pepper corns
    1 teaspoon coriander root, washed and scraped
    1 teaspoon ginger, peeled and roughly diced
    1 clove garlic
    250g fish filets,boneless
    125g green prawns, choped finely
    1 tablespoon corn flour
    1 tablespoon fish sauce
    1 tablespoon thin soy sauce
    pinch of whit sugar

    TO MAKE FISH BALLS: grind the peppercorns in a mortarand then add the coriander root, garlic and ginger. pound to a paste. place the fish into a food processor and pulse to a rough past. (the longer the fish is in the food processor the more bouncy the texture as the protien strands are stretched). transfer fish to a bowl and add the rest of the ingredients. mix well to combine then with wet hands roll into small balls, not quite golf ball size. bring a pot of salted water to the boil and poach the fish balls. they are ready when they float to the top. this should take 4-5 min. remove and drain on a tea towel.

    TO MAKE CURRY: open tin of coconut milk without shaking and remove the thick cream from the top. place in a wok/pan with veg oil and simmer till it looks curdled. Add the green curry paste and cook over low heat stirring till smells fragrent. Add the remaining coconut milk, fish sauce, palm sugar and kaffir lime leaves. Bring to the boil then reduce to a simmer. Add the poached fish balls and warm through. Stirr in the wild ginger and basil leaves, cook until basil has just wilted.

    SERVE IN A BOWL AS IS OR ON A BED OF RICE

    also very nice with chunks of cooked fish and prawns added to the curry if you dont have time for the balls.

    forgot to mention that not all fish go so well in the balls.
    tuskies and snaps are excellent.
    moses pearch i wouldnt use again in this recipe.
    im trying pearlies tonight wich should go well.

    mmmm the pearlies were devine. the only problem with cooking dishes such as these is the boss expects them all the time.
