I here bulk people complain about our crays up here only to find out they've boiled them to death so here is my favourite 2 ways to cook them up.


Fried-
-Pluck the tail meat and cut it up into little pieces following the seams in the meat.
-coat in fish coating (get in pkt from supermarket)
-deep fry until coating is cooked (do not over cook or it will turn to rubber)
-serve with dipping sauces my fav combo is sourcream,abc & sweet chilly.

Baked-
-Pluck tail meat. (same as above)
-lightly pan fry in garlic butter (do not cook though just lightly fry)
-make a morney sauce
-prebake sliced vegi's of your choice but not fully cooked
-mix sauce,cray & veg together along with diced bacon and mushroom and put back in oven untill cooked.

The head legs and feelers are best boiled with salt like crab but again dont over do it.
