I meant to put this up for Greg a few months ago but I forgot.
This is a very simple recipe that will put the store bought rubbish that they call "Custard Tart's'' to shame.
I have searched high and low for the perfect Tart . In my search, I have eaten crap pastries’ from every corner of Australia (Ok I have encounted a few good Tarts too ).
Time to save the disappointment of the watery crap from the shops and make one for yourselves.
Baked Custard Tart
Sweet Shortcrust Pastery
Ing:
100g Butter
50g Castor Sugar
1 Egg
180g Plain Flour
1g Baking Powder
Method:
Pre heat oven to 180 degs cel
Combine butter and sugar in Kitchen Aid. (Do not turn it to cream)
Add beaten egg.
Sift flour & baking powder. Add to butter mix, mix evenly, mould into a ball.
Refrigerate for 1 hour before use.
Roll out on cool surface, line 25 cm Tart or Flan tin.
Blind bake with baking beans for 15 minutes at 180 degs cel.
Custard Mix
Ing:
2 Whole eggs, 2 Egg Yolks
50g Castor Sugar
450ml Thin Cream
1 ts Nutmeg
1 ts Cinnamon
Method:
Reduce oven to 160 degs
Beat eggs, egg yolks & sugar until light and pale.
Add cream & spices to egg mix and lightly mix.
Pour into Shortcrust shell & bake for 40 - 50 mins at 160 degs cel
Mmmmmmmmmmm enjoy your new Tart by yourself or woo someone else with it. N.B this means you should share
Egg Mix prior to baking
Ready to be served with a piece of Poached Pear and Raspberry coulie
