The meat is very white & light tasting. Best as you described with maybe a little lemon zest (grated peel) or a kiffa lime leaf or two.

Managed a couple of Parrot on the last trip and not having had them before was wondering what ways you guys cook them up? I was thinking along the lines of leaving the skin on roll him in foil and onto the BBQ. Any thoughts appreciated!

I just like to fillet and skin dusted in flour then into the fry pan with some garlic butter,Yum,

pee on it and walk away.
I like to drop mine into boiling water first and then just pluck the feathers until just bare skin showing, using a cleaver remove the head and feet before gutting and a final wash.
Stuff with a macadamia/ bread farce and bake in a moderate oven for around 20 minutes. Serve with fresh veg and a little garlic butter. Yum!!
