Thanks for that Derek, think I will now have to go out and get a couple of crabs or a bucket of yabbies/redclaw.

I usually fry up some garlic, ginger, chilli & schallots then add some bottled oyster sauce & sweet chilli sauce toss in some cleaned raw crab & stir. Turn down heat and put a lid on and let steam till cooked (5 to 10 minutes) Great in a camp oven over fire.

    Chilli Crabs

Couplea cleaned, quartered green crabs with the claws cracked

    3 cloves garlic
    1 teaspoon fine ginger
3-5 fresh chillies or 1 teaspoon chillie paste
slow cook in oil with a couple teaspoons sesame oil added.

Add 1/2 cup tomatoe sauce (NOT homebrand)
    1 tablespoon soy sauce
    1/4 cup sweet chillie sauce
1 tablespoon Char Sui sauce and a couple teaspoons of sugar
    1 teaspoon salt
    (adjust salt/sugar/chillie to taste)

Add the crabs, and simmer till cooked, or the battered meat and toss, or sliced chinese bbq pork (want the recipe?)

Use this sauce a lot for everything from seafood to deep fried, battered pieces of chicken or pork with rice...simple and very tasty
