Luke,
To tell you the truth I really don't care what species of fish you have as long as it's fresh.
Number 1 - would have to be reef fish like coral trout, red emporer, pearl pearch snapper etc, (cheating by wrapping them together.
Number 2 - you can't beat whiting just lightly fried in butter.
Number 3 - being raised in Tasmania I grew up on BBQ flounder and when fresh has the softest and tastest flesh you'll find.
Number 4 - Introduced to this last year at Fraser and it's the humble Tailor fillet fresh as it gets cooked on the BBQ and served on still warm buttered toast - (fantastic)
Number 5 - In winter down the Pin whipping off a couple of big fillets from some fresh sea bream and cooking lightly in butter and serving with eggs for breakfast after an all night fishing trip.
Makes my humble Sweetlip served up for dinner last night seem pale in comparison.

Bugman

Yep hard to beat fresh reefies - No1
2nd would be whiting - just love them cooked in butter and thrown on a sandwich.
3rd would be Pearl perch - don't eat alot - boat's not big enough
4th Fresh Barra - the emphasis on fresh.
5th Don't mind the old sooty on the barbie when I'm up north also.

My fave 5 might seem abit out of place compared to the rest but here they are:
1. Brown or Rainbow Trout, especially smoked
2. Atlantic Salmon
3. Whiting fried in batter
4. Good old flattie fillets, which many people seem to forget.
5. Redfin on the BBQ

Cheers, Matty

My all time favourite fish is grunter also known as spotted javelin with a close second of coral trout. S.A salmon and snook aren't that bad either. Although not a fish you can't beat fresh squid it's just so soft and doesn't feel like your trying to eat a crumbed rubber band. Happy fishing

( 1 ) Coral Trout ( smoked excellent )
( 2 ) Snapper ( pink )
( 3 ) West Australian Jew Fish
( 4 ) WA Black Bream
( 5 ) Whiting

I'm fortunate that all , apart from the Coral Trout are caught around my home waters of Bunbury & surrounds . Thats not to say that I am fortunate enough to catch them hahahahah!
It's interesting to see what everyones different favorites are & I think it's just as well everyone dose'nt like the one species of fish .

I see you like the boney variety of fish Aussie ;)

Well folk I have had just about all the above mentioned.

As we all agree, fresh is best. I can't decide so I'll put up a few oddities. ???

1. fresh deep fried Trevally.

2. fresh caught & marinated Tempura Prawns

3. Webber cooked Coral Trout

4. coconut crumbed and shallow fried Whiting

5. fresh floured and shallow fried Hussar

I have tried grilled fish,,, made the leftovers into a new sole for my shoes.

Once had Barracuda flakes cooked in an italian saucey thingie :D

If anyone hereafter puts up a post containing that raw fish stuff, I think I'll chuck.............. ;D
