do this all the time if gathering a few for a feed. Freeze them fresh & cook em when you get out there.

do you defrost them first or just dump them in boiling water?
How about leaving them in a damp hessian bag?
how long do they last ?

Someone once told me to freeze the crab upside down as the watery crap comes out with the shell when you open them up - as opposed to settling in the meat.

I tried it once but didnt seem to matter much, mind you I dont get to eat anywhere near the amount of crab I would like to. Currently only getting to eat one or two a year.(bought ones at that).\

The best way I have found is to cook them and place them in water. Then freeze the whole lot. it stops freezer drying. When you defrost them, the crab comes out as fresh as the day you caught it.

P.S. Thats how the restaraunts sell you "fresh seafood" apparently.

In our experience, we have frozen sandies green, cooked in shell, cooked and out of the shell, and they always come out floury, not in segments like they do fresh. Does this happen to Mudcrab too?

if you put them in a holding pot make it out of good steel. I have seen some busted open by I assume BIG COD or sharks to get at the crabs. :-(
