does anyone know how to brine leftover mullet fillets.i need to know the salt method not metho .thanks

Got this from a book "1001 fishing tips". It suggests it for slimy mackerel but assume it should work for mullet although I have not tried it.
1. Get some rock salt and make up a saturates solution with water.
2. Place fillets in solution for 24 hours in cool place.
3. Lay out eight sheets of newspaper, place fillets on newspaper,lightly sprinkle with salt solution and place another 8 sheets of newspaper on top.
4. After 24 hours pack fillets in freezer bags and freeze.

What exactly does that do, apart from make your fillets extremely salty? ???

Appologies for being in denial, but what do you do with them after you 'brine' them?
