It was barramundi cod until they made it illegal to keep them. Then it was footballer cod until they put an impossible size limit on them. Then it was red emperor until the last one I caught turned to rubber in the frypan. :'( :'( Not sure now. Maybe coral trout.

Sushimi is good. Thin sliced raw GT, mackerel or cobia with soy sauce and/or wassabi. [smiley=thumbsup.gif] Cheers, Mike

:) Red Emperor in a pub in Proserpine. We made it a point of travelling there everytime we came ashore to have this cheap counter meal. Taxi fare and the booze we drank sure outweighed the $7 cost of the meal back then. Damn I can't remember the name of the pub. Can anyone remind me please?

:P Pinky snapper caught off beach on Port Phillip Bay then tossed whole onto the hot coals of a camp fire with a handful of black olives. Then pulled apart with the fingers and eaten with the hot olives, crusty bread and some cheap red wine.

::) Dolphin fish caught off the stern of a yacht in the middle of the Coral Sea half way to Noumea. Cut up into thick steaks and fried in butter then served with a drizzle of lemon juice. All within a half hour of it being pulled on board.

YUM!

A nice coral trout gutted, cleaned, head chopped off, stuffed with onion, tomato, lemon, garlic and salt, wrapped in foil and slow baked in the camp oven. You cannot get any better let me tell you. [smiley=thumbsup.gif]

I am a sucker for the tuna. If I can't get my hands on it the I have to go salmon as I like my fish medium rare. The pearlies, small (legal) squire and whiting are close behind. It's been sooo long since I pulled a red emperor that I can't remember the taste enough to compare :-?.

Hi Stuie,
Is it illegal to keep barramundi?

15-09-2005, 04:20 PM
I cant pick just one as long as it is fresh... I aint fussy.

Saphire,
Barramundi Cod is a completely different fish to the Barramundi.

Barramundi ( Lates calcarifer )

Barramundi Cod ( Cromileptes altivelis )

Well, good question, back in the day I remember eating Maori Wrasse in a restaurant i worked in on the Great Barrier Reef - now that was good - a fresh fish to catch, coral trout has always been my favourite, but now its the stomach cavity (no not the intestines) of Tuna - eaten as sashimi, the fatty meat around the stomach cavity of tuna simply melts in the mouth - fantastic -------- have also tried whale but thats a thread long time past.

Fingermark is definately the best. However, our local estuary grunter is hard to beat.

i reakon any fresh average table fish beats a frozen top table fish

Lucky_Phill
17-09-2005, 05:29 PM
FRESH ! can't beat it. surely it doesn't matter what type of fish ( within reason ), but if you can get it into the pan asap, it has to be better than any frozen Trout, Nannygai, Snapper, Pearl Perch or whatever.

OK, to answer the question truely, the story goes like this:-

On board a 38ft Mariner sitting just south of Fairfax Island some years ago, fishing in fairly shallow water. Fish were biting hard and hitting the floor of the boat in good numbers. Coral Trout, Sweetlip, the odd spanish mackerel and Hussar.

The cook at the time, grabbed a Hussar or 3 from the floor, still kicking , and proceeded to rip a fillet off and pop it straight into a frypan, just behind us. As we are still donging fish, he puts a plate full of Hussar fresh caught, fresh cooked fillet on the transom. We are eating the fish that were literally still in the water not more than 10 minutes ago.

If ya can beat that, go ahead !

Cheers Phill

Well I have eaten a few fishies, I could say that Spanish Mack, Golden Trev, King George Whiting, Snapper and Barra were awesome (because they are); however, I believe the nicest fish around believe it or not is the English Perch (Redfin). They are easy to fillet and are just awesome with chips! Especially knowing that they are a pest species and you filling ya tummy isnt hurting the eccosystem!
Yes they are freshater and from the south but try em they are really nice !
Cheers

I going out on a limb here
Gummy Shark
Bit a batter and down the hatch
Fresh or frozen the quality stays the same.
I also think of eating qualities of fish should be in the pure form, not cooked in marinate, herbs and spices etc

Blue devil from South Australia is excellent - but it's hard to kill such a pretty fish

I would have to say smoked trout (freshwater) is one of my favorites at the momment. Followed by smoked eel.

Jew actually rates up there, along with flathead fillets with lemon grass.

Raw herring is a staple - at three times a week (as I live in the northern hemisphere)

Tonight I had red poon with shallots, potatoes and a hollandaise sauce. Still on the strongside.

Another top dish was pan fried sole done in a similar manner, but potatoes were also pan fried (Bratkartoffeln).

Who would think potatoes go well with fish - living in the colder northern hemisphere has opened my eyes to other ways of cooking or not cooking fish.
