Oh I miss a slab of fresh Tailor! Been up in the north here for 10 years and the first thing I do when I visit Bris is go looking for some fresh tailor fillets.
About the closest thing we have in taste up here is Dart. Yep, there is a tropical species of swallowtail dart almost identical to the southern cousins.

I wonder if there are any other tropical species that come close to tailor?

well done boaz i caught heaps at forster/harrington (nsw) over the years using a dummy great sport & good tucker, they say if you bleed and fillet the catch but keep each fillet pairs together they keep for a few days, my catch don"t hang around that long to stale.

cheers!
