Here one of a couple of quick videos we did the other day.

I will give it a go looks like you dont waste any where as much flesh as the way I fillet and skin my flathead.
Are all bones removed?

I will have to give the 2/3rds slice down the middle a go next time I skin a flathead ;) Near impossable to get it off in one go otherwise!!!!!!!

Yes, all bones are removed this way.

Will give that a go next time. I usually rip the skin off if fish are very fresh, can be a bit of a hit and miss though.

Hiya Phill,

You make it looks sooooo easy. Would you mind advising where you got your knives and what types/ lengths etc.

I'm sure the knives & glove help, but would need to do a lot to get to your standard.

Good one Phil, thanks for that. It seems a really sharp knife is the key. I'm a bit of a novice with the old sharpening steel, anyone know the best way to use one?

There is another way to do them by filleting,skining and de boning all in one step.Will see if i can post up the video when found.

Great video, I just tried it on the little flatheads I caught today.
What I found with the little flatheads, is that you dont need to flatten the flathead before skinning. Instead, I went back as per video right back to the tail, and before the tail is chopped I reverse the blade and start skinning. That way you can still hold the fish. It worked a treat. Still have to cut a v to remove the backbone though.
