This post has had a couple of runs over the years but nothing really came up on how to do it! :-[

I've filleted around 126,000,000 whiting :-? in my life but never been able to butterfly them!

One technique I came across was to leave the bit behind the head attached to the two side fillets and then "pull the backbone out!"

Yeh like it would be easier to milk a mouse! I simply rip the little buggers head off!

Anybody with the answer thanks?

As far as I know it's just like normal filleting but you carefully work down around the ribs and leave the section below the gut in one piece - ends up looking like a butterfly on the plate. Pretty if you are into that sort of thing but time consuming.

This is a trout but same same.

I think I will stick to just filleting them I rekon you could do a bucket full and have drunk half a carton before old mate has even done ten.
