Go to a specialist plastics supplier, plain old cutting board used in cheap kitchen cutting boards will just crack and fall to bits if exposed to the weather/sun in no time

I just bought a large 19mm thick board for use as the lid for a live well as well as a cutting board for about $30

I just went and bought a whole sheet of boat board from dotmar. $301.40 NUVEX BOAT BOARD 9.52MM 2.44 x 1.38M, Thats a whole lotta cutting board....... I will use it......already designing my fold up aluminium ironing board filleting table. Might even get my clothes ironed as well.

But yes as mentioned most plastic places will sell a good UV resistant HDPE in many colours.
