I was disappointed to hear of a professional fisherperson removing lures from the mouth of a just caught fish, and replacing it for the photo with a lure they were promoting, on many occasions.

I wont divulge the person, or my source may have repercussions against their business, but I am disappointed. I guess I shouldn't be surprised with the amounts of money in the fishing retail business these days.

I guess lures are designed to catch fisherfolk, not fish.

Yep, nothing new with the practice. Surprised they used a lure to catch the fish first.
Normally if it's for advertising photo shoots where time is money, they will use bait then put the lure in.
I'm not saying lures don't catch fish just professional photographers aren't cheap and the quickest method on the day/tide/time might be bait.

The expensive crap they promote catches no more fish than other gear. Its more the skill of the angler or the location. I know of them using closed (private) waters or fish farms to shoot film of fresh water fish as well.
