well i've been at this fishing game about 9 months or so now and still not got the hang of quickly and e-fish-ently deposing of fish.
My first approach was knife through the head, this proved surprisingly less effective then i had assumed.
Lately i'm using a knife in behind the gills, its been working well but my last dinner companion, a good sized estuary cod was a little resillient to this method.

Whats the best way to go about the messy stuff?

Brain spike http://www.ikijime.com then clip one gill with a set of clippers or better still electrical clippers like these that are stainless steel http://www.##########.com/item/8-200-mm-Multifunctional-Industrial-scissors-electrical-wire-scissors-tin-snips-Sheet-Metal-Shear-Electronic-shear/1624271625.html
Forum member Richard showed me a set like these, they were so good I went and bought a pair.

Brain spiking stops the fish jumping around. Better for the fish and your fillets.

Smaller fish that dont need bleeding usually go straight into the ice.. Studied all the ikijime pics I could find for most of my target species but I usually never find the brain for a quick and humane kill so the Donger always get a workout and throat cut for a bleed out if certain species need it.
