Hey everyone I have a 4.9m clark abalone and it was a ex rescue boat it has bench seats along the sides up the front and along the back and was wondering if I pulled the foam out of one and turned it into storage wether it would effect anything ?

Yes you would have 1 less seat.

Ok so it wouldn't affect it's ride at all ?

From your description, and as long as you do not modify the alum structure, no harm would be done. Go for it.
You will have less flotation....

You have to ask yourself, Why is the foam there ?
If the answer is Flotation, and you don't need or want the benefits of the flotation in the event of a swamping etc, then yep. cut it out.
