hi all just read "how to catch fish and cook it" by alistair mcglashan published 2009.
Got it from brisbane council library but will buy a copy.
really good stuff on a range of fish, without the usual rubbish, plus some good looking recipies. he gives a table rating for species discussed using; excellent,good,reasonable and crap. Guess the rating for australian salmon.
