We've got a 635L that originally had a 88 175hp 2 stroke on it when it was new and it powered along enough.

We up graded to a 200hp and it's a lot better.

So twins would be sufficient I think.

it will be no speed demon, but propped correctly it will be fine, remember 2X 90HP will pull a single 180HP backwards (if you actualy wanted to do such a thing), but you lose out in speed over a single, the twins V single thing has beeen done almost as many times as the 2 V 4 stroke thing, twins are nice, look cool and all sorts of other pluses, but fail in price, maintenance, speed and cost, I have had twins for more years than I care to remember now, and a pile of singles before that, I know what I prefer, twins every time.

I might add, if you are buying for safety, as in getting home if one fails, take into account a single 90 will probaly not plane that Boat (almost certainly really) so it will be no better than a small auxilary and a big single.
