Just wondering how you prepare them for the table. Do you just cut them into steaks and skin them?

fillets, not steaks

head off, tail off
sharpen knife
fillet off
sharpen knife
other fillet off
sharpen knife
skins off fillets
thin out the whole fillet into serving thickness fillets
batter and fry
