Hello all,

Something i come across all the time in the seafood industry and might help some of you guys.

DON'T add ice to an esky or foam box to keep bait/seafood FROZEN, it doesn't work. In fact it does the complete opposite, it thaws frozen product.
Take a block of pillies for example, straight out of the freezer -18 deg or similar, cover that in ice, also approx. -18 deg and all is well until the ice melts and turns into water, ice melts as it warms and it in turn warms the frozen product. Melting ice is great for chilling fresh or chilled product ie stuff at 1-4 deg, cause it cools the product as it melts, complete opposite with frozen stuff. Best bet with frozen bait etc is try to insulate it so it doesn't loose temp. Wrap it in newspaper, pack it tightly with other frozen stuff in your esky or styrofoam container, anything that insulates it is way better than in an esky with ice.
