i know how to fillet and gut but how do you kill goldens,silvers before filleting

either brain spike, or cut the throat.
biggest key to a great tasting fillet is to let a fish go through rigamortis.
i never fillet the same day of capture, at a minimum, i leave fish is a good slurry for at least a day.

I put them directly into an ice slurry.
