Grill for about five minutes and baste with a mixture of..

Havent tried it on Spanish, but the doggie the other day I did in breadcrumbs with parmessan cheese, cracked pepper, and a little dill. Scott & Taipan seemed to like it.

Mackeral is a great fish for mediterrean Flavours. I like to make a Mash Potato with Parmesean cheese, chopped kalamata olives, picked thyme leaves and a little chopped anchovie mixed into it. marinate your mackereal steak/fillet in Extra Virgin Olive oil and Balsamic vinegar, with some chopped garlic and a little thyme and basil. Throw on the char of the BBQ and then pop on the hot mash. Drizzle with a little olive oli and balsamic vinegar, maybe some sea salt and cracked black pepper. Serve with crusty bread and a Wolf Blass 2004 Yellow Label Shiraz.

cut into 2cm thick fillets and lightly coat in flour, cook in pan or on bbq until golden. In seperate pan melt a good dollop of butter and add in a tablespoon of capers, cook slowly for 2min without letting the butter burn while squashing capers with fork. Serve mac fillet on plate with a good covering of the sauce, salt and pepper to taste and side salad.

enjoy;)

what we usally do is, mix up a little curry powder with flour in a bag throw in the fillets give a good mix, cook them in butter.

another way we do is make up a batter & cover your fillets in it, now instead of using bread crumbs try crunching up a packet of samboy barbecue chips & use that as your crumb, pretty good.

Cut macks into fairly thin scallop fillets (no skin) . Double dip in egg and flour with a dash of garlic powder. Ie egg flour ,egg flour. Cook on bbq. Make up a white sauce base and add a can of John West smoked mussels and blend. Serve fillets covered in the smoked mussel sauce. Imfiik.
