Could someone tell me where to find out how to do butterfly whiting fillets.

most of the Fish Markets have them, and I know a guy on the Sunshine Coast may be able to help you out if you are stuck!

Thanks for that, I had an uncle that used to butterfly whiting but I can't remember how to do it. I've tried to find books etc but can't seem to find how to anywhere.

OH, you want to do them yourself?? you can buy them already Crumbed and ready to cook, a guy on the Sunny Coast does them when they are thick, to do them is fairly easy but time consuming, the way I do Garfish is just Fillet from the Belly side and do not cut all the way to the doral fin, then turn over and fillet the other side and then it just sort of comes off the backbone but is still joined at the top (butterflied) very easy, but takes forever to do a few Fish, if you have the time, Garfish are just sensational done this way!

Do you roll your gars with a bottle after a night in the fridge on a metal tray before filleting / butterflying them? Yum

no. I just flour and fry in very hot oil for a jiffy, they are just the best huh!
