I caught an Amberjack last night just over 10kg.

When I was cleaning and skinning it, under the skin, near the tail, I saw what appears to be worms. They did not seem to be moving although it had been on ice all night.

The reason I am sus on them was they were not on both sides like sinewy tendon tissue would be and I was able to pull them out of the flesh.

I have attached a photo. Any ideas? Are they worms?

Whilst the rest of the fish is clear I am concerned. Can I eat it?

Large Kingies get the same thing as do a lot of other species such as jew etc. Cook some up and give it a go, getting your head around it will be the hardest part.

cheers

Hello mate, Long time no read ;D

They're harmless and actually exist in more fish than you can poke a stick at...........you just don't see 'em. Sticking fillets in the fridge normally brings the worms to the surface of the flesh, which is why you rarely see 'em when you fillet and eat same day. Have a read here and Good Chewin' ;D

Lone Wolf,
They look bloody horrible don't they?:-/
Big Jewies quite often have worms, they are a parasite. In fact I got a 38 cm Golden Trevally last week that had worms!!

They are harmless, they dissappear when flesh is cooked.

Just don't tell your misses!!;D

Coota are infested with them....You would be lucky to catch one without them...They are just an acceptable thing here when fishing for coota...I have been told that if you put the fillets in the fridge overnight they will come out of the flesh...But I have not tried it as yet...Cheers Mick

They're actually an indicator of a healthy marine environment:

Parasitic worms can invade and live on or within
another organism, called the “host.” Although
virtually all fish can become infested with worms,
certain groups of fish appear to be more susceptible
to them. Fishes of the drum family, such as
red drum, spotted seatrout, croaker, and black
drum, are most often affected, but worms are also
common in amberjacks, groupers, and sharks.
Most worms have a complicated life cycle that
requires that they inhabit more than one host
animal before they can reproduce. The worms
take advantage of the marine food web to grow and
multiply, moving from one type of animal to another
as predators become prey.
Worms are rarely harmful to the fish they inhabit,
and in fact, they can be good indicators of
the overall health of a marine environment.
Generally, fish in healthy marine systems will have
a greater diversity of species of worms in relatively
low numbers, whereas fish in more polluted areas
will have fewer species in greater abundance.

This is a good article relating to them............no scientific gobbledygook, but in a language we can understand, which must be a first for an American article (my apologies to El Carpo) ;);D
