NICK'S BEST GARLIC PRAWNS





1 TBLS EXTRA VIRGIN OLIVE OIL
1 TBLS BUTTER
3 GARLIC CLOVES FINELY CHOPPED
1 TBLS CRUSHED (JAR) GARLIC
3 SHALLOTS SLICED
2 TBLS CHOPPED GARLIC CHIVES
1 TEASPOON CRAZY SALT - EDITED
1/2 TSP CRACKED PEPPER
3/4 CUP WHITE WINE
1 CUP DOUBLE CREAM
1 TSP POWDERED CHICKEN STOCK
30 MEDIUM PEELED GREEN PRAWNS


MELT BUTTER & OLIVE OIL THEN FRY GARLIC, SHALLOTS, CHIVES, PRAWNS, PEPPER &
CRAZY SALT UNTIL PRAWNS SLIGHTLY COOKED. ADD WHITE WINE AND SIMMER FOR
5 MINUTES COVERED.
ADD CREAM AND SPRINKLE IN CHICKEN STOCK, THEN STIR CONTINUOUSLY FOR A
FURTHER 5 MINUTES.

SERVE OVER TOP OF GRILLED RUMP/RIB FILLET WITH SERVE OF FRIES AND SALAD ON SIDE.

Are you sure about 1 tbs salt or is it tsp salt?????????

:-[ Runamuck, sorry yes it is meant to be a teaspoon but that is of crazy salt not normal salt (crazy salt is a garlic and herb salt). sorry about that!!!!

A top recipie but needs more pepper, but thats just me, i loved the garlic chives... cant beat proper garlic prawns.. ignore me on the pepper, i m the sort of guy at a restaurant when the waiter comes over and gives a sprinkle, i ask him to keep going... going..and going, hey the waiters look at me like im an alien but thats ok, just love the pepper

Sounds like a good recipie Nick. I'll give it a try .... minus the beef.

Can't see the sense in ruining good prawns by puting them on beef.

Is crazy salt available at the supermarket?or is it your own secret recipe?as I have not been able to find it

Hi Sue-ellen,
it is available at Coles/Bi-Lo & Woolworths where you buy salt/pepper/chicken salt etc. It's colourful and called Crazy Salt (a mixture of garlic, herbs & sea salt).
My recipe says 1 tblsp but meant to be a tsp, just add it to your liking. Thanks,

Had crazy salt on a rump steak cooked on an open flame when trout fishing down the snowy's last year,best steak i've ever eaten.

That's an awesome recipe. Double cream is a bit naughty though, I might give it a try with extra light cream or carnation milk. Should still taste OK :)
