Hey guys and gals,
Would love to know some of the best mussel recipes around.

This is a splash and dash type one. Scrub mussels and remove beards. in a saucepan or frypan with a lid put some olive oil, chopped onion and garlic when onion goes clear add a big, big slurp of white wine up to half a bottle if you want. Chuck in two tins of crushed roma tomatoes and a handful of good black olives. Bring back to a fast simmer and dump in your mussels then put the lid on. Check after 10 minutes mussels will be open any that aren't discard. Add some roughly torn fresh basil leaves, give the mix a quick toss, season to taste. Serve in bowls with fresh crusty bread.

Very basic recipe which is fun to play around with eg add chilli, replace olives with anchovies or add a splash of cream at the end to cut back the acidity. Main thing is only one pot to clean and very quick.

the main thing with mussels is do NOT overcook, they sort of shrink up to a hard ball if you do, I have used those frozen one's in the open shell you get at the fish markets, and made them into "kilpatrick" that is chopped bacon, bit of soy sauce and under the griller, come up a treat and takes a jiffy to make, also had melted cheese on them,

Used to eat em all the time as kids when we lived on the lake.

Smoked Mussels..

Build a campfire sized fire and wait till it dies down to coals.
Wade out into the lake up to your knees, pick up a clump of mussels about the size of the bucket you are carrying.
Walk back to the fire and throw the mussels in.
Wait one minute then get a garden fork and lift the clump of mussels to the side.
Get a fork and eat em.

Beautifull, warm, smokey mussels...mmmmmmm
