View Full Version : BBQ flathead recipe

I've been threatening to do some flathead on the bbq for a while now, so this is the plan. Firstly I put into the mortar the following - 2 cloves of garlic crushed and chopped, equivilent quantity of fresh ginger chopped, zest and juice of one lime, a sprinkle of paprika and a few pepper corns. Crushed all this up into a rough paste. Cubed the flathead fillets (about 1 inch chunks) into a bowl then add the paste, mix through thoroughly and cover with glad wrap and pop in the fridge for half hour.
Crank up the bbq, and fry fish chunks till cooked. As this is wildly experimental, I was not entirely sure how this would go, but sure came up the goods.

But of course! this is the camping section, ya don't often see someone sipping on a few chardys by the camp fire... or at least I hope not. ;D

saw a recipe for flattys on foxtel last week .....half dozen olives taken off the pit and crushed along with saltn pepper and stuffed inside ...outside was overed in lemon zest coated with virgin olive oil and wrapped in cooking paper then alfoil and put in hot pan (bbq would be ideal)few minutes a side with the result looking simply delish . Will try one day .

I like it just cooked in alfoil stuffed with prawns and lemon slices with a dash of garlic and topped with Cayenne pepper.

I freaked my boys out by baking one whole and putting it on the table, staring at them :) They insist that from now on it never gets served with the head on.

Looks and sound gooood.

Did the flatty go a bit dry in the bar B? Read somewhere they do a bit.

Was wondering if a few dobs of butter or a drizzle of olive oil might not have gone astray.

I've just realized it been about 11 months straight since I've had flatty; now I'm depressed as well as hungry. :'(
