Ever popular, traditional Thai Fish Cakes can be made with any fresh fillets of fish trimmings.

FISH CAKES:
1 kg mullet fillets
2 eggs
3 Tablespoons roughly chopped coriander
1 teaspoon brown sugar
2 teaspoon (or to taste) green curry paste
100 gr finely sliced green beans
Oil to fry

SAUCE:
4 tablespoons white sugar
2 tablespoons fish sauce
1-2 tablespoons lime juice
1 finely sliced red chilli

* Remove skin and bones from fish.
* Process fish with egg, coriander, sugar and curry paste.
* Mix in beans.
* Roll 2 tablespoons of mixture into slightly flattened ball.
* Fry in deep hot oil, until golden, then drain well on paper towels.
* Arrange on a platter with coriander sprigs and serve with the sauce.

Sauce: Shake all ingredients together in a jar until sugar dissolves.
