Can anyone suggest a good stuffing to use with coral trout when baking.

Try this....won't overpower the fish flavors:

Bunch of parley and couple of handfuls of celery leaves.
salt / pepper to taste
lemon juice plus rind
1 garlic clove
couple drops tabasco
couple large knobs of butter
drizzle of white wine

blend till a little pasty, then smear over whole fish (make cuts on both sides, and squeeze filling into cuts)
Stuff remaining paste into cavity, with cut up bits of the used lemon/ lime skin then bake

Thanks moondancer sounds like it would put a nice flavor through it.
