TANDOORI IN A TIC - Great for Shovelly or Flake

Here you go (HYG)

Thick fillets of Shovelly/Flake
250 gram tub of natural yoghurt
1/2 cup of lemon juice
Couple of cloves of garlic
1 inch of ginger
Tandori paste - 2 tablespoons
1 teaspoon of ground cumin
Salt/pepper to taste
**couple of birdseye chillies (optional)

Crush garlic
Grate ginger
Chop chillies
Mix with yoghurt, lemon juice, ground cumin to make tandori marinade
(Blend the lot in food processor if you have one - lot quicker)

Plonk in the fish fillets and set aside for 30 minutes (the longer the better)

If oven cooking, turn oven to 220c and preheat, place marinated fish in baking dish on well oiled rack - cook for 10 minutes, then turn and baste with residual marinade - cook further 10 minutes

If BBQing - cook on well oiled flat plate for 10/15mins turn occasionally and baste with residual marinade, just before serving place over open grill plate to lightly charcoal fish (30 secs each side........well you'll see anyway)

Serve with salad, lemon wedges, chappati/pita bread and cucumber raita.
